Biography

A dedicated lecturer with over 15 years of experience in hotel management education, specializing in culinary studies and project management. A member of the Shannon College of Hotel Management faculty since 2008, holding a BA in Culinary Arts from the Technological University of the Shannon (formerly Galway-Mayo Institute of Technology), a Postgraduate Certificate in Teaching and Learning in Higher Education from the University of Galway, and a Masters degree from the University of Birmingham.My teaching philosophy centers around fostering a hands-on, experiential learning environment.Areas of interest: Culinary innovation, sustainable practices in hospitality, and project management.

Research Interests

My research interests lie at the intersection of vocational education, inclusive teaching practices, and hospitality management education. I am currently exploring the relationship between educational inequality and assessment practices in education, with particular emphasis on Universal Design for Learning principles and co-present group learning approaches.
