Biography
After studying Proffessional Cookeryat GMIT amp; Advanced Pastry atDIT I spent many years in the Hospitality industry both at home and abroad in Switzerland, France amp; USA. Working in many five star establishments in various capacities, Chef de Partie, Chef Patisserie, Sous Chef.I commenced teaching with Northern Ireland Hotel and Catering College, going on to teach with CERT, FAS amp;Failte Ireland before joining Shannon College of Hotel Management.
